One to visit: Fallow, Caters 2022 Best Newcomer Winner

Fallow’s chefs and co-owners, Will Murray and Jack Croft, met in the kitchens of Dinner by Heston Blumenthal.

This sustainably -minded restaurant found its permeant home at 2 St Jame’s Market after a series of sold-out pop-up residencies at Carousel, Crispin and 10 Heddon Street in Mayfair.

Sustainability and creative cooking is at the core of their dishes. The cuisine is focused on whole-animal butchery and ingredients often neglected ingredients. Produce is sourced from the British Isles, although the restaurant also grows its own mushrooms using spent coffee grounds. Roughly half the menu is plant-based, like a mushroom parfait made from fungi grown in the basement.

Fallow has coveted accolades such as the ‘best new restaurant in London 2020’ Hot Dinners, ‘Number 1 of 10 in Conde Nast traveller’s best restaurants in London 2020’ and attracted dazzling reviews from the likes of Fay Maschler.

The team inlisted the help of Christina Leung and Timothy Tan of Studio Gossamer to aid their commitment to reduce waste. Studio Gossamer reused and reprised existing fixtures to give them a fresh new look even using oyster and mussel shells accrued from the restaurant pop-up to clad walls in terrazzo style. The smart space caters to a 65-cover dining room, with a bar and six-seater chef’s counter overlooking the kitchen. The wraparound terrace plays host to bare-wood tables and leather seats hidden behind lush foliage.
